Another School Year, Another Opportunity to Feed Hungry Minds

Breakfast for Learning (BFL) would like to wish you all the best this academic year! 

This is a particularly special time of year for us because we know that with the generous support of our donors and community partners, BFL-funded nutrition programs will have an incredible impact on the lives of hundreds of thousands of students across the country.  Throughout the 2015/16 school year BFL funds will reach 238,853 children and provide over 40 million meals and snacks to fill bellies, fuel minds, and transform young lives.  

Here’s what one principal told us about the positive change that she has seen in students:

 “The attitudes of many students towards school and learning appear much improved. Students appear happier and ready to learn. BREAKFAST IDEAS TO HELP MAKE YOUR MORNINGS EASIER

Mornings are a busy time for families so we are giving you a hand with breakfast by offering five irresistible and easy batch recipes that your kids will love!  Our Before the Bell booklet features kid-friendly recipes from Breakfast for Learning-funded nutrition programs. Every recipe is dietitian-approved, loaded with healthy ingredients and easily made into batches for nutritious breakfasts all week long.

FEATURED RECIPE:  No-Bake Breakfast Bars

This recipe is easy to prepare the night before, and ready to cut and serve in the morning.  It is also a terrific snack option if you want to simply refrigerate to grab-and-go all week long. 

Makes: 12 BarsNo_Bake_Breakfast_Bar_Image.png

Ingredients:

1 cup raisins

1 ½ cups of large flake oats

½ cup of chopped almonds (optional)

1 cup bran flakes

¼ cup liquid honey

¼ cup of peanut or almond butter or non-nut alternative

Directions:

STEP 1:  Toast oats, almonds and bran flakes in a large, non-stick skillet over medium heat until light and golden (approximately 5-10 minutes).

STEP 2:  Blend and heat honey and nut butter in a saucepan over a medium low heat until melted. Add raisins and stir. Pour into oat mixture and mix well.

STEP 3:  Press mixture into a well-greased, 9-inch baking pan. Once it’s pressed into bars, refrigerate for at least an hour or until it’s firm.

STEP 4:  Cut into bars.

STEP 5:  Store in the fridge for up to one week.

Tips:

  • Need a nut butter alternative? Try substituting peanut butter with tasty, nut-free pea butter.
  • Serve with a glass of low-fat milk and fresh fruit for a balanced breakfast.
